There's a New Chef in Town

The most exciting news to happen to the Wine Cottage Bistro since our Grand Opening is the hiring of our new chef, Troy Tolbert. You all know me to gush over every little thing that happens at the WCB because I am proud of all the little things that goes on here. Well, this time I am not exaggerating at all. Chef Troy is amazing. His style of cooking is YUMMY!! He visits the farmer's market every week, sometimes twice a week to gather fresh, interesting veggies to use as sides or as entrees for our veggie friends.

He plans on changing the menu a little each season to fully benefit from the local produce. He's already changed lunches to the point where you need to come in and experience it. Everything is just a little better.

You know he used to work at the Wine Cask in Los Olivos and after culinary school he worked for 9 years under the world famous Bay Area Chef, Bradley Ogden. This is where he really learned and honed his "Fresh, Seasonal, California Cuisine". To give you an example of his philosophy he noticed that we use tomatoes on our sandwiches. He said, "Tomatoes are not in season yet. We will make our own pickles and serve them with the sandwiches. People will love the pickles so much they won't be disappointed they don't have a flavorless tomato on the sandwhich." Simple, fresh, and great that is what I have seen so far.

If you haven't been in to the Wine Cottage Bistro for a while come in. See how much we've changed. We've grown up and matured. We'd love to see you in for lunch or dinner.

PS. Remember we are closing on Sundays only temporarily. Chef Troy is working on a great new "Wine Country Brunch" menu that he will unveil in a few weeks.
